  • Shredded Sharp Cheddar Cheese: 1½ cups
  • Salt: ½ teaspoon
  • Ground Pepper: ¼ teaspoon

Instructions

  • Prepare the Vegetables:
    • Dice 1 onion and 2 medium carrots. Mince 3 cloves of garlic.
  • Cook the Soup Base:
    • In a large skillet, melt 1-2 tablespoons of butter over medium-high heat.
    • Add diced onion and sauté until it begins to soften, about 3 minutes.

  • Add Potatoes and Broccoli:

  • Thicken the Soup:
    • In a small bowl, stir ¼ cup of cornstarch into 1 cup of milk until smooth.
    • Slowly stir this mixture into the hot soup to thicken it.
  • Finish with Cheese:
    • Add 1½ cups of shredded sharp cheddar cheese to the soup.
