- Dice 1 onion and 2 medium carrots. Mince 3 cloves of garlic.
- Cook the Soup Base:
- In a large skillet, melt 1-2 tablespoons of butter over medium-high heat.
- Add diced onion and sauté until it begins to soften, about 3 minutes.
- Add diced carrots, ½ teaspoon of salt, and ¼ teaspoon of ground pepper. Cook for another 3-4 minutes.
- Add minced garlic and sauté for 30 seconds until fragrant.
- Add Potatoes and Broccoli:
- Add peeled and chopped potatoes and 4 cups of chicken stock to the skillet. Cover and bring to a simmer.
- Let it simmer for about 10 minutes until potatoes begin to soften.
- Add broccoli florets and continue to simmer until both potatoes and broccoli are tender, about 10 more minutes.
- Thicken the Soup:
- In a small bowl, stir ¼ cup of cornstarch into 1 cup of milk until smooth.
- Slowly stir this mixture into the hot soup to thicken it.
- Finish with Cheese:
- Add 1½ cups of shredded sharp cheddar cheese to the soup.
