Ingredients
- 1/2 lb. ground beef
- 2 tablespoons taco seasoning
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 6 medium flour tortillas
- 1 1/2 cups refried beans
- 1 1/2 cups shredded Mexican-blend cheese
- Sour cream, for serving
- 1/2 cup cherry tomatoes, quartered
- 1/4 cup sliced black olives
- 2 green onions, thinly sliced
- Hot sauce (such as Cholula), for serving
Instructions
. Prepare the Ground Beef:
- Preheat your oven to 375°F and line a baking sheet with parchment paper.
- Heat a large skillet over medium heat and add the ground beef. Break it up with a wooden spoon as it cooks.
- Cook until no longer pink (about 6 minutes), then drain excess fat.
- Return the skillet to heat, add taco seasoning, and season with salt and pepper. Cook for 1 additional minute, stirring to combine. Remove from heat.
2. Assemble the Pizzas:
- Place three tortillas on the prepared baking sheet.
- Spread 1/4 cup of refried beans evenly over each tortilla.
- Divide the seasoned ground beef between the tortillas.
- Sprinkle 1/4 cup of shredded cheese on top of each tortilla.
- Top with the remaining three tortillas.
- Spread another 1/4 cup of refried beans over the top of each tortilla.
- Sprinkle another 1/4 cup of shredded cheese on each pizza.
3. Bake the Pizzas:
- Place the baking sheet in the preheated oven.
- Bake for 10-12 minutes, or until the cheese is melted and the beans are heated through.
4. Garnish and Serve:
- Remove the pizzas from the oven and let them cool slightly.
- Garnish with sour cream, cherry tomatoes, black olives, and green onions.
