Ingredients

  • 1/2 lb. ground beef
  • 2 tablespoons taco seasoning
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 6 medium flour tortillas
  • 1 1/2 cups refried beans
  • 1 1/2 cups shredded Mexican-blend cheese
  • Sour cream, for serving
  • 1/2 cup cherry tomatoes, quartered
  • 1/4 cup sliced black olives
  • 2 green onions, thinly sliced
  • Hot sauce (such as Cholula), for serving

Instructions

. Prepare the Ground Beef:

  1. Preheat your oven to 375°F and line a baking sheet with parchment paper.
  2. Heat a large skillet over medium heat and add the ground beef. Break it up with a wooden spoon as it cooks.
  3. Cook until no longer pink (about 6 minutes), then drain excess fat.
  4. Return the skillet to heat, add taco seasoning, and season with salt and pepper. Cook for 1 additional minute, stirring to combine. Remove from heat.

2. Assemble the Pizzas:

  1. Place three tortillas on the prepared baking sheet.
  2. Spread 1/4 cup of refried beans evenly over each tortilla.
  3. Divide the seasoned ground beef between the tortillas.
  4. Sprinkle 1/4 cup of shredded cheese on top of each tortilla.
  5. Top with the remaining three tortillas.
  6. Spread another 1/4 cup of refried beans over the top of each tortilla.
  7. Sprinkle another 1/4 cup of shredded cheese on each pizza.

3. Bake the Pizzas:

  1. Place the baking sheet in the preheated oven.
  2. Bake for 10-12 minutes, or until the cheese is melted and the beans are heated through.

4. Garnish and Serve:

  1. Remove the pizzas from the oven and let them cool slightly.
  2. Garnish with sour cream, cherry tomatoes, black olives, and green onions.
