Description

Creamy, cheesy, and irresistibly comforting, this Boursin and Tomato Pasta Bake combines the savory flavors of Boursin cheese, sweet cherry tomatoes, and tender pasta. Perfect for cozy dinners or quick weeknight meals, it’s a one-dish recipe that the whole family will love.

Ingredients

  • 12 teaspoons olive oil (for greasing)
  • 1 block Boursin cheese (regular or plant-based)
  • 1 cup (150 g) fusilli pasta
  • 1 14-ounce tin (400 g) cherry tomatoes
  • 3/4 tin fresh water (use the empty tomato tin as a measure)
  • Salt and pepper to taste

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 390°F (200°C). Grease an oven-safe baking dish with olive oil to prevent sticking.
  2. Assemble the Ingredients:
    • Place the block of Boursin cheese in the center of the dish.
    • Spread the uncooked fusilli pasta evenly around the cheese.
    • Pour the tinned cherry tomatoes over the pasta, ensuring it’s evenly distributed.
    • Fill the empty tomato tin 3/4 full with fresh water and add it to the dish. This will help cook the pasta.
  3. Bake the Dish:
    • Place the baking dish in the oven and bake for 20-25 minutes, or until the cheese is soft and partially melted, and the pasta is tender.
  4. Stir and Serve:
    • Remove the dish from the oven and stir everything together until well combined, creating a creamy sauce.
    • Season with salt and pepper to taste.
    • Serve immediately and enjoy!

Notes

  • Pasta Options: Substitute fusilli with penne, rigatoni, or farfalle if preferred.
  • Customize with Veggies: Add fresh spinach, mushrooms, or roasted red peppers before baking.
  • Protein Additions: Mix in cooked chicken, shrimp, or tofu for a heartier dish.
