  • 1/2 cup onion, diced
  • 1/2 cup celery, diced
  • 2 cloves garlic, minced
  • 3 tablespoons butter
  • 1/4 cup all-purpose flour
  • 2 cups seafood stock or chicken broth
  • 1 cup heavy cream
  • 1 teaspoon Old Bay seasoning
  • Salt and black pepper, to taste
  • 2 tablespoons fresh parsley, chopped
  • Juice of 1/2 lemon

Cheddar Bay Biscuit Topping

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup cold unsalted butter, cubed
  • 1 cup shredded sharp cheddar cheese
  • 3/4 cup buttermilk
  • 1/4 teaspoon garlic powder
  • 2 tablespoons fresh parsley, chopped

Instructions

  • Prepare the Seafood Filling
    • In a large skillet, melt butter over medium heat.
    • Add onion, celery, and garlic, sautéing until softened (3-4 minutes).
    • Stir in flour and cook for 1-2 minutes until golden.
    • Gradually whisk in seafood stock and heavy cream. Simmer for 4-5 minutes until thickened.
    • Add shrimp, scallops, crab meat, mixed vegetables, Old Bay seasoning, salt, and pepper. Cook for 3-4 minutes until the seafood is opaque.
    • Stir in lemon juice and parsley. Remove from heat and let cool slightly.
  • Make the Cheddar Bay Biscuit Topping
    • Preheat oven to 425°F (220°C).
    • In a mixing bowl, combine flour, baking powder, and salt.
    • Cut in cold butter until the mixture resembles coarse crumbs.
    • Fold in shredded cheddar cheese, garlic powder, and parsley. Gradually stir in buttermilk until dough forms.
  • Assemble the Pot Pie
    • Pour the seafood filling into a large baking dish or individual ramekins.
    • Spoon biscuit dough over the filling, leaving small gaps for steam to escape.
  • Bake to Perfection
    • Bake in preheated oven for 20-25 minutes until the biscuit topping is golden brown.
    • Let cool for a few minutes before serving.

Notes

  • For the best flavor, use fresh seafood.
