- 1 pound ground beef
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1/2 cup onion, finely chopped
- 1/4 cup pickles, diced
- 1/4 cup bell peppers, diced (optional)
- 1 cup shredded cheddar cheese
- 2 tablespoons mustard
- 2 tablespoons ketchup

- 12 egg roll wrappers
- Vegetable oil for frying
- 1 egg, beaten (for sealing, optional)

Instructions
- Prepare the Filling
- Heat a skillet over medium heat. Add ground beef, salt, pepper, and garlic powder. Cook until browned, breaking up the meat as it cooks.
- Drain excess fat and add onions. Sauté for 2-3 minutes until softened.
- Remove from heat and stir in shredded cheddar cheese, mustard, ketchup, pickles, and optional bell peppers.
- Assemble the Egg Rolls
- Lay an egg roll wrapper on a clean surface in a diamond shape.
- Place a heaping tablespoon of the beef mixture in the center.
- Fold the bottom corner over the filling, then fold in the sides and roll tightly toward the top corner. Seal the edge with water or beaten egg.
- Fry the Egg Rolls
- Heat vegetable oil in a deep fryer or large pot to 375°F (190°C).
- Fry egg rolls in batches, turning occasionally, for 2-3 minutes until golden brown and crispy.
- Remove and drain on paper towels.
- Serve
- Arrange egg rolls on a platter and serve hot with your choice of dipping sauces.
