Ingredients

For the Dough:

  • 4 ½ cups all-purpose flour
  • 1 ⅓ cups dark brown sugar, packed
  • 2 teaspoons ground cinnamon
  • 3 teaspoons ground ginger
  • ¾ teaspoon salt
  • 1 teaspoon baking soda
  • ½ teaspoon ground cloves
  • 1 cup (2 sticks) unsalted butter, cold and cubed
  • ½ cup unsulphured molasses
  • 1 teaspoon vanilla extract
  • ¼ cup milk

For the Coating:

  • ½ cup powdered sugar
  • ½ cup granulated sugar

Instructions

  • Prepare Your Tools:
    • Line baking sheets with parchment paper to prevent sticking.
  • Mix the Wet Ingredients:
    • In a large mixing bowl, beat the cold butter, dark brown sugar, and molasses together until light and fluffy, about 3 minutes.
    • Add the vanilla extract and milk, mixing until just combined.
  • Combine the Dry Ingredients:
    • In a separate bowl, whisk together the flour, cinnamon, ginger, salt, baking soda, and cloves.
    • Gradually add the dry ingredients to the wet mixture, stirring until a dough forms. The dough will be thick but should come together with mixing.
  • Shape the Cookies:
    • Scoop out 3-tablespoon portions of dough and roll into balls.
    • Roll each ball in granulated sugar, followed by powdered sugar, ensuring an even coating.
    • Place the cookies on the prepared baking sheets, spaced about 2 inches apart. Flatten slightly with your palm.
  • Chill the Dough Balls:
    • Refrigerate the cookie dough balls for at least 1 hour. This step helps the cookies maintain their shape and enhances the crinkle effect.
  • Bake the Cookies:
    • Preheat your oven to 375°F (190°C).
    • Bake the cookies for 10-12 minutes, or until the edges are set but the centers remain soft.
    • Allow the cookies to cool on the baking sheets for 10 minutes before transferring to a wire rack to cool completely.
