Description

Creamy Chicken Tortellini is the ultimate comfort food, combining tender chicken, savory cheese-filled tortellini, and a rich, creamy sauce packed with garlic, sun-dried tomatoes, and parmesan cheese. This dish is a perfect blend of hearty and elegant, ideal for both family dinners and dinner parties.

Ingredients

For the Chicken:

  • lbs boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • ½ tsp black pepper
  • ½ tsp Italian seasoning
  • ½ tsp paprika

For the Tortellini:

  • 1 (19 oz) bag frozen cheese tortellini

For the Marry Me Sauce:

  • 2 tbsp butter
  • ½ cup sun-dried tomatoes, sliced thin
  • 3 tsp garlic, minced
  • 1 cup low-sodium chicken broth
  • 2 cups heavy cream
  • 1 tsp Italian seasoning
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 cup parmesan cheese, shredded
  • 2 cups baby spinach, chopped

Instructions

  1. Season the Chicken:
    • Cut the boneless chicken breasts into bite-sized pieces.
    • In a small bowl, mix black pepper, Italian seasoning, and paprika.
    • Sprinkle the seasoning mixture evenly over the chicken pieces and set them aside.
  2. Sear the Chicken:
    • Heat olive oil in a large skillet over medium-high heat.
    • Add the chicken pieces and cook for 6-8 minutes, stirring occasionally, until they are golden brown and cooked through.
    • Remove the cooked chicken from the skillet and set it aside on a plate.
  3. Make the Marry Me Sauce:
    • Reduce the heat to medium-low and melt butter in the same skillet.
    • Add the minced garlic and sun-dried tomatoes to the butter, sautéing for about 30 seconds until fragrant.
    • Stir in the chicken broth, followed by the heavy cream, Italian seasoning, black pepper, and paprika.
    • Whisk continuously until the sauce begins to bubble gently.
    • Gradually whisk in the parmesan cheese until fully melted and the sauce is smooth and creamy.
  4. Combine and Simmer:
    • Add the cooked chicken back into the skillet.
    • Pour in the frozen tortellini and the chopped baby spinach.
    • Stir everything together until well coated.
    • Let the dish simmer for about 5 minutes, stirring occasionally, until the spinach wilts and the tortellini is heated through.
  5. Garnish and Serve:
    • Garnish with freshly chopped parsley and a sprinkle of parmesan cheese.
    • Serve the creamy chicken tortellini hot and enjoy the explosion of flavors.

Notes

  • Use Fresh Parmesan Cheese: Pre-grated cheese doesn’t melt as smoothly as freshly shredded parmesan.
  • Don’t Skip the Garlic: Garlic adds depth to the sauce, so make sure it’s fresh and aromatic.
  • Add Veggies: Feel free to toss in extra veggies like mushrooms, bell peppers, or zucchini for added nutrition.
  • Control the Salt: Since parmesan and chicken broth are naturally salty, taste the sauce before adding additional salt.
  • Whisk Continuously: This prevents the sauce from curdling and ensures a creamy texture.
