Ingredients
- 16 ounces Italian sausage (ground)
- 1/4 cup butter (1/2 stick)
- 1/2 medium onion, chopped small
- 2 sticks celery, chopped small
- 2 cloves garlic, minced
- 6 tablespoons all-purpose flour
- 4 cups low-sodium chicken broth
- 2 cups half-and-half
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1 pound russet potatoes, diced small
- Salt and pepper to taste
Instructions
- Cook the Sausage
- In a soup pot over medium-high heat, cook the sausage until browned, breaking it apart as it cooks (about 10 minutes).
- Remove the sausage with a slotted spoon and drain excess grease, leaving about 1 tablespoon of fat in the pot.
- Sauté Vegetables
- Add butter to the pot and melt over medium heat.
- Stir in chopped onion and celery. Cook for 4-5 minutes until softened.
- Make the Roux
- Add minced garlic and cook for 1 minute until fragrant.
- Sprinkle in flour and stir continuously for 2 minutes to remove the raw taste.
- Build the Soup Base
- Gradually whisk in chicken broth until smooth.
- Stir in half-and-half, Worcestershire sauce, red pepper flakes (if using), and diced potatoes.
- Simmer
- Return cooked sausage to the pot. Bring the soup to a boil over high heat, then reduce to medium-low and simmer for 15 minutes, stirring occasionally.
- Season and Serve
- Once the potatoes are tender and the soup is thickened, taste and adjust seasoning with salt and pepper.
- Serve hot, garnished with fresh parsley if desired.
Notes
- Use mild or spicy Italian sausage to suit your taste.
- For a gluten-free option, replace flour with cornstarch or gluten-free flour.
- Add extra veggies like carrots, spinach, or kale for more nutrients.
