Instructions

  1. Cook the Sausage
    • In a soup pot over medium-high heat, cook the sausage until browned, breaking it apart as it cooks (about 10 minutes).
    • Remove the sausage with a slotted spoon and drain excess grease, leaving about 1 tablespoon of fat in the pot.
  2. Sauté Vegetables

    • Stir in chopped onion and celery. Cook for 4-5 minutes until softened.
  3. Make the Roux

  5. Simmer
