Ingredients

Chili Base:

  • 2 boneless, skinless chicken breasts
  • 11 oz canned corn, drained
  • 15 oz black beans, drained and rinsed
  • 10 oz diced tomatoes and green chilies (undrained)
  • 2 cups chicken broth
  • 1 cup cooked bacon, chopped
  • 1 oz ranch dressing mix (1 package)
  • 1 tsp ground cumin
  • 1 tbsp chili powder
  • 1 tsp onion powder
  • 8 oz cream cheese, cubed
  • 1 cup shredded cheddar cheese

Optional Toppings:

  • Avocado slices
  • Sour cream

  • Tortilla chips

Instructions

 Prep Ingredients

  1. Drain and rinse the corn and black beans.
  2. Chop the cooked bacon into small pieces.
  3. Cube the cream cheese to allow even melting.

2. Assemble in the Crockpot

  1. Place chicken breasts at the bottom of your crockpot.
  2. Add the corn, black beans, diced tomatoes with green chilies, and chicken broth.
  3. Sprinkle in the ranch dressing mix, cumin, chili powder, and onion powder.
  4. Gently stir to combine the ingredients, then place cream cheese cubes on top of the chicken.

3. Cook on Low Heat

  1. Cover and set the crockpot to Low for 6-8 hours. Avoid lifting the lid to ensure consistent cooking.

4. Shred the Chicken
