Ingredients

For the Cupcakes:

  • 1½ cups full cream milk
  • ½ cup vegetable oil
  • 2 tablespoons Greek yogurt or sour cream
  • 1 teaspoon vanilla extract
  • Pink/red food gel (as needed)
  • 1 teaspoon strawberry flavoring
  • Yellow food gel (as needed)
  • 1 teaspoon mango flavoring
  • 2 teaspoons tequila (optional)

For the Frosting:

  • 1 batch American or Swiss Meringue Buttercream
  • Pink/red food gel (as needed)
  • Strawberry flavoring (as needed)
  • Yellow food gel (as needed)
  • Mango flavoring (as needed)

For Decoration:

  • 1 cup granulated sugar
  • 10 limes (cut into wedges)
  • 10 strawberries (halved)

Instructions

Preheat and Prepare Equipment

  1. Preheat your oven to 275°F (140°C) for fan-forced or 320°F (160°C) for conventional.
  2. Line two cupcake trays with liners to make approximately 24 cupcakes.

2. Make the Cupcake Batter

  1. In a large mixing bowl, whisk together flour, caster sugar, baking powder, and salt.
  2. Add softened butter to the dry ingredients and mix until crumbly.
  3. In another bowl, whisk eggs, milk, vegetable oil, Greek yogurt, vanilla extract, and tequila (if using). Combine wet ingredients with the dry mixture until smooth.

3. Flavor and Color the Batter

  1. Divide the batter evenly into two bowls.
  2. Add pink/red food gel and strawberry flavoring to one bowl. Stir until the color is even.
  3. Add yellow food gel and mango flavoring to the other bowl, mixing thoroughly.

4. Fill and Bake

  1. Spoon or pipe alternating layers of strawberry and mango batter into the cupcake liners, filling each about two-thirds full.
  2. Bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean.
  3. Allow cupcakes to cool completely on a wire rack before decorating.

5. Prepare the Frosting

  1. Divide buttercream into two portions.
  2. Color and flavor one portion with pink/red food gel and strawberry flavoring, and the other with yellow food gel and mango flavoring.

  1. Lightly wet the tops of the cooled cupcakes and dip them in granulated sugar to create a margarita-style rim.
