Ingredients
For the Cupcakes:
- 3½ cups all-purpose flour
- 1¼ cups caster sugar
- 3 teaspoons baking powder
- ½ teaspoon fine salt
- ½ cup unsalted butter (softened)

- ½ cup vegetable oil
- 2 tablespoons Greek yogurt or sour cream
- 1 teaspoon vanilla extract
- Pink/red food gel (as needed)
- 1 teaspoon strawberry flavoring

- 1 batch American or Swiss Meringue Buttercream

- 1 cup granulated sugar
- 10 limes (cut into wedges)
- 10 strawberries (halved)
Instructions
Preheat and Prepare Equipment
- Preheat your oven to 275°F (140°C) for fan-forced or 320°F (160°C) for conventional.
- Line two cupcake trays with liners to make approximately 24 cupcakes.
2. Make the Cupcake Batter
- In a large mixing bowl, whisk together flour, caster sugar, baking powder, and salt.
- Add softened butter to the dry ingredients and mix until crumbly.
- In another bowl, whisk eggs, milk, vegetable oil, Greek yogurt, vanilla extract, and tequila (if using). Combine wet ingredients with the dry mixture until smooth.
3. Flavor and Color the Batter
- Divide the batter evenly into two bowls.
- Add pink/red food gel and strawberry flavoring to one bowl. Stir until the color is even.
- Add yellow food gel and mango flavoring to the other bowl, mixing thoroughly.
4. Fill and Bake
- Spoon or pipe alternating layers of strawberry and mango batter into the cupcake liners, filling each about two-thirds full.
- Bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean.
- Allow cupcakes to cool completely on a wire rack before decorating.
5. Prepare the Frosting
- Divide buttercream into two portions.
- Color and flavor one portion with pink/red food gel and strawberry flavoring, and the other with yellow food gel and mango flavoring.
