  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup sugar (for filling)

  • 3 large eggs
  • ½ cup sour cream

Instructions

  1. Prepare the Crust
    • Preheat oven to 325°F (165°C). Lightly grease a 9-inch springform pan.
    • In a bowl, combine graham cracker crumbs and melted butter. Mix until evenly coated.
    • Press the mixture firmly into the bottom of the pan. Refrigerate while preparing the filling.
  2. Make the Blueberry Sauce
    • In a saucepan, combine blueberries, ¾ cup sugar, cornstarch, and lemon juice.
    • Cook over medium heat for about 10 minutes, stirring constantly, until thickened.
    • Set aside to cool completely.

    • In a large bowl, beat cream cheese, 1 cup sugar, and vanilla extract until smooth.

    • Spoon half of the cooled blueberry sauce over the layer.
    • Add the remaining cream cheese mixture and top with the rest of the blueberry sauce.
