Ingredients
- 2 1/2 lbs Yukon gold potatoes, peeled and diced
- 1 tablespoon salt (for boiling)
- 6 tablespoons butter, divided
- 4 cloves garlic, finely minced
- 3–4 tablespoons half and half
- 1/2 cup Parmesan cheese, shredded
- 4 large egg yolks
- Fresh parsley (optional, for garnish)
- Additional finely grated Parmesan (optional, for serving)
Instructions
- Prepare the Potatoes
- Peel and dice Yukon gold potatoes into 1 1/2-inch chunks.
- Place potatoes in a large pot, cover with cold water, and add 1 tablespoon salt.
- Bring to a boil over medium-high heat, then reduce heat to medium-low. Cover and simmer for 15-20 minutes, or until tender.
- Drain the potatoes thoroughly and set aside.
- Sauté Garlic in Butter
- While potatoes are cooking, melt 4 tablespoons of butter in a small saucepan over medium heat.
- Add minced garlic and sauté for 1-2 minutes until fragrant.
- Stir in 3 tablespoons half and half and remove from heat.
- Mash the Potatoes
- Mash the drained potatoes using a potato masher or ricer until smooth and lump-free.
- Add Flavor
- Stir in Parmesan cheese, garlic butter mixture, and season with salt and pepper to taste. Let the mixture cool slightly.
- Incorporate Egg Yolks
- Add egg yolks one at a time, stirring quickly to combine without cooking the yolks.
- If the mixture feels too thick, add the remaining tablespoon of half and half.
- Pipe the Potatoes
- Preheat your oven to 425°F (220°C).
- Line a baking sheet with parchment paper.
- Transfer the potato mixture to a piping bag fitted with a large star tip.
- Pipe 12 mounds onto the prepared baking sheet.
- Brush with Butter and Bake
- Melt the remaining 2 tablespoons of butter and brush over each potato mound.
- Bake for 16-19 minutes, or until the tops are golden brown.
- Garnish and Serve
- Sprinkle with fresh parsley and additional Parmesan cheese, if desired. Serve immediately.
