Description
Golden, buttery, and tender, these Easy Homemade Potato Farls are a simple yet comforting Irish classic. Perfect as a breakfast side, a snack, or a way to use up leftover mashed potatoes, they’re a versatile dish that pairs beautifully with almost any meal.
Ingredients
- 1 pound mashed potatoes (about 2 cups; freshly made or leftovers)
 - 1/2 cup all-purpose flour (plus extra for dusting)
 - 2 tablespoons unsalted butter (softened)
 - 1/2 teaspoon salt (adjust to taste)
 - Butter or oil (for frying)

Instructions
- Prepare the Dough:
- In a large mixing bowl, combine the mashed potatoes, flour, softened butter, and salt.
 - Mix until the ingredients form a soft, slightly sticky dough. Add a sprinkle of flour if necessary to make it manageable, but avoid over-flouring to keep the farls tender.

 - Shape the Farls:
- Lightly flour a clean work surface.
 - Knead the dough gently for 1–2 minutes to ensure even consistency.
 - Roll the dough into a 1/2-inch thick circle, about 8 inches in diameter.
 - Using a sharp knife, divide the circle into four equal triangles (farls).

 - Cook the Farls:
- Heat a non-stick skillet or griddle over medium heat. Add a small amount of butter or oil to coat the surface.
 - Place the farls in the skillet and cook for 3–4 minutes per side, or until golden brown and slightly crispy. Adjust the heat as needed to avoid burning.

 - Serve and Enjoy:
- Remove the farls from the skillet and serve warm. Pair them with eggs, bacon, smoked salmon, or simply slather them with butter for a satisfying meal.

Notes
- Using Leftovers: Ensure leftover mashed potatoes are not overly creamy or watery. Add a little extra flour if necessary to balance the dough.
 - Flavor Add-Ins: Mix in shredded cheese, chives, cooked bacon bits, or a pinch of paprika for extra flavor.
 - Baking Option: Bake farls at 375°F (190°C) on a greased baking sheet for 15 minutes, flipping halfway through.
