- Chicken broth: 1 cup
- Milk or cream: 2/3 cup
- Potato (diced, cooked): 1
- Frozen vegetables (thawed): 1 1/2 cups
- Cooked turkey (chopped): 2 cups
- Double pie crust: 1 (for top and bottom)

- Dice the onion and potato, and chop the cooked turkey into bite-sized pieces.
- Thaw your frozen vegetables if needed.
2. Make the Filling
- Preheat your oven to 400°F (200°C).
- Melt the butter in a medium saucepan over medium-low heat.
- Add the diced onion and sauté for about 5 minutes until softened.
- Stir in the flour, poultry seasoning, thyme, salt, and pepper. Cook for 2 minutes, stirring constantly.
- Gradually whisk in chicken broth and milk, adding a little at a time. Stir until the mixture is smooth and thickened.

- Line a 9-inch pie plate with one of the pie crusts.
