Instructions
- Prepare the Crust:
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the butter, light brown sugar, and all-purpose flour. Mix until the ingredients form a crumbly dough.
- Press the mixture into the bottom of a well-greased or parchment-lined 10-inch square pan.
- Bake for 12 minutes (or 15 minutes if doubling the recipe for a 9×13 pan). Remove from the oven and let it cool for 10 minutes.
- Prepare the Filling:
- In a large bowl, combine the pineapple tidbits and 1 cup of shredded coconut.
- Sprinkle with flour, light brown sugar, and kosher salt. Stir to coat evenly.
- In a separate bowl, whisk together the eggs, vanilla extract, and lime juice. Pour this mixture into the pineapple and coconut mixture, stirring until well combined.
- Assemble the Bars:
- Pour the pineapple filling over the cooled crust, spreading it evenly.
- Sprinkle the remaining 1 cup of shredded coconut evenly over the top.
- Bake the Bars:
- Bake in the preheated oven for 25-27 minutes, or until the coconut topping turns golden brown.
- Remove the bars from the oven and allow them to cool completely before slicing.
