Ingredients
- 1 lb ground beef
- 1 medium yellow onion, chopped
- 1 ½ teaspoons minced garlic
- 1 tablespoon olive oil
- 28 oz can fire-roasted crushed tomatoes
- 1 ¾ cups beef broth
- 15 oz can red kidney beans, rinsed and drained
- 15 oz can pinto beans, rinsed and drained
- 3 tablespoons tomato paste
- 1 tablespoon chili powder
- 1 tablespoon ground cumin
- 1 tablespoon brown sugar
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Optional Toppings:
- Shredded cheddar cheese
- Sour cream
- Chopped green onions
- Fresh cilantro
- Tortilla chips
Instructions
- Prepare the Base
- Heat olive oil in a large Dutch oven or heavy pot over medium-high heat.
- Add the chopped onion and sauté for 2 minutes, stirring occasionally, until softened.
- Cook the Ground Beef
- Add ground beef to the pot and cook for 5 minutes, breaking it up with a wooden spoon, until browned.
- Drain any excess fat from the pot.
- Add Aromatics and Spices
- Stir in the minced garlic and cook for 30 seconds until fragrant.
- Add chili powder, cumin, brown sugar, oregano, salt, black pepper, and tomato paste. Stir well to coat the beef mixture evenly.
- Build the Sauce
- Pour in the beef broth, scraping up any bits from the bottom of the pot.
- Add the fire-roasted crushed tomatoes and stir to combine.
- Incorporate the Beans
- Stir in the kidney beans and pinto beans.
- Bring the mixture to a boil over medium-high heat.
- Simmer the Chili
- Reduce the heat to low and let the chili simmer gently for 1–2 hours, stirring occasionally.
- Cover the pot for the first part of the cooking time, then uncover during the last 30 minutes to thicken the chili.
