Ingredients

  • 1 lb ground beef
  • 1 medium yellow onion, chopped
  • 1 ½ teaspoons minced garlic
  • 1 tablespoon olive oil
  • 28 oz can fire-roasted crushed tomatoes
  • 1 ¾ cups beef broth
  • 15 oz can red kidney beans, rinsed and drained
  • 15 oz can pinto beans, rinsed and drained
  • 3 tablespoons tomato paste
  • 1 tablespoon chili powder
  • 1 tablespoon ground cumin
  • 1 tablespoon brown sugar
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional Toppings:
    • Shredded cheddar cheese
    • Sour cream
    • Chopped green onions
    • Fresh cilantro
    • Tortilla chips

Instructions

  • Prepare the Base
    • Heat olive oil in a large Dutch oven or heavy pot over medium-high heat.
    • Add the chopped onion and sauté for 2 minutes, stirring occasionally, until softened.
  • Cook the Ground Beef
    • Add ground beef to the pot and cook for 5 minutes, breaking it up with a wooden spoon, until browned.
    • Drain any excess fat from the pot.
  • Add Aromatics and Spices
    • Stir in the minced garlic and cook for 30 seconds until fragrant.
    • Add chili powder, cumin, brown sugar, oregano, salt, black pepper, and tomato paste. Stir well to coat the beef mixture evenly.
  • Build the Sauce
    • Pour in the beef broth, scraping up any bits from the bottom of the pot.
    • Add the fire-roasted crushed tomatoes and stir to combine.
  • Incorporate the Beans
    • Stir in the kidney beans and pinto beans.
    • Bring the mixture to a boil over medium-high heat.
  • Simmer the Chili
    • Reduce the heat to low and let the chili simmer gently for 1–2 hours, stirring occasionally.
