Ingredients
- Tortellini: 1 (19 oz) bag frozen cheese tortellini
- Chicken: 1½ lbs boneless, skinless chicken breasts, cut into bite-sized pieces

- Seasonings for Chicken: ½ tsp black pepper, ½ tsp Italian seasoning, ½ tsp paprika
- Butter: 2 tbsp
- Sun-dried Tomatoes: ½ cup, in oil, drained and sliced thin
- Garlic: 3 tsp, minced
- Chicken Broth: 1 cup, low-sodium
- Heavy Cream: 2 cups
- Seasonings for Sauce: 1 tsp Italian seasoning, 1 tsp black pepper, 1 tsp paprika
- Parmesan Cheese: 1 cup, finely shredded
- Baby Spinach: 2 cups, chopped
Instructions
- Prepare the Chicken:
- Season chicken pieces with ½ tsp black pepper, ½ tsp Italian seasoning, and ½ tsp paprika.
- Cook the Chicken:
- Heat 2 tbsp olive oil in a large skillet over medium-high heat.
- Add chicken pieces and cook until golden brown and cooked through, about 6-8 minutes. Remove and set aside.
- Make the Sauce:
- Reduce heat to medium-low and add 2 tbsp butter to the skillet.
- Once melted, add 3 tsp minced garlic and ½ cup sun-dried tomatoes. Sauté for about 30 seconds.
- Pour in 1 cup chicken broth and 2 cups heavy cream. Add 1 tsp Italian seasoning, 1 tsp black pepper, and 1 tsp paprika.
- Whisk continuously until the sauce bubbles. Slowly whisk in 1 cup Parmesan cheese until melted and smooth.
- Combine and Cook:
- Add cooked chicken, 2 cups chopped baby spinach, and frozen cheese tortellini to the skillet.
- Stir occasionally until the spinach wilts and the mixture simmers for about 5 minutes.
