Ingredients

Main Ingredients:

  • 4 boneless, skinless chicken breasts (about 2 lbs)
  • 2 cups low-sodium chicken broth
  • 1 (19 oz) can white kidney beans, drained and rinsed
  • 1 (12 oz) can corn, drained
  • 1 (4.3 oz) can green chiles
  • 1 teaspoon Tabasco Green Sauce
  • 1 teaspoon chili powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 4 oz cream cheese (room temperature)
  • 1 tablespoon corn starch
  • 1 tablespoon water

  • Tortilla chips

Instructions

1. Cook the Chicken:

  1. Place chicken breasts and chicken broth in a 3-4 quart Dutch oven or soup pot.
  2. Bring to a boil over medium-high heat, then reduce heat to medium-low.
  3. Cover and simmer for 15 minutes, or until chicken is cooked through.
  4. Remove the chicken and shred it with two forks on a cutting board.

2. Build the Chili Base:

  1. Return shredded chicken to the pot with the broth.
  2. Add white kidney beans, corn, green chiles, Tabasco Green Sauce, chili powder, onion powder, and salt.
  3. Stir to combine and simmer over medium heat.

3. Add Creaminess:

  1. Cut cream cheese into cubes and stir into the chili.
  2. Cover and let the chili simmer for 10 minutes, stirring occasionally until the cream cheese is fully melted and incorporated.

4. Thicken the Chili:

  1. Mix corn starch and water in a small bowl to create a slurry.
  2. Stir the slurry into the chili and let it simmer for a few more minutes until thickened to your liking.

5. Serve and Garnish:
