Ingredients

For the Chicken Souvlaki:

  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1/3 cup olive oil
  • 56 cloves garlic, minced
  • Juice from 1 lemon
  • Zest from 1 lemon
  • 1 1/2 tablespoons dried oregano
  • 2 teaspoons dried rosemary
  • 1 teaspoon dried parsley
  • 1 teaspoon sweet paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Tzatziki Sauce:

  • 1 medium cucumber, grated
  • 1 teaspoon salt, divided
  • 1 cup plain Greek yogurt
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 23 cloves garlic, minced
  • 1 tablespoon dried dill weed
  • 1/4 teaspoon black pepper
  • Pinch of sugar

For Assembling the Wraps:

  • Pita bread
  • Fresh lettuce
  • Sliced tomatoes
  • Sliced red onion
  • Crumbled feta cheese

Instructions

Marinate the Chicken:

  1. Cut chicken into 1-inch chunks and pat dry.
  2. Whisk olive oil, garlic, lemon juice, zest, oregano, rosemary, parsley, paprika, salt, and pepper in a bowl.
  3. Coat chicken pieces with the marinade, cover, and refrigerate for at least 2 hours or overnight.

2. Prepare the Tzatziki Sauce:

  1. Grate cucumber and sprinkle with 1/2 teaspoon of salt. Let sit for 15 minutes, then squeeze out excess moisture.
  2. Combine Greek yogurt, olive oil, lemon juice, garlic, dill, black pepper, sugar, and the remaining 1/2 teaspoon salt. Stir in the cucumber and refrigerate for at least 30 minutes.

3. Grill the Chicken:

  1. Soak wooden skewers in water for 30 minutes if using.
  2. Preheat the grill to medium-high heat and oil the grates.
  3. Thread marinated chicken onto skewers.
  4. Grill for 3-4 minutes per side until cooked through (internal temperature of 165°F/74°C).
