Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 medium zucchinis, sliced into rounds
  • 1 red bell pepper, diced
  • 1 large tomato, diced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1/4 cup olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley (optional, for garnish)

Instructions

  • Preheat the Oven
    • Preheat your oven to 375°F (190°C).
  • Prepare the Baking Dish
    • Drizzle olive oil on the bottom of a large baking dish to coat it lightly.
  • Season the Chicken
    • Season the chicken breasts with salt, pepper, garlic powder, onion powder, and half the dried oregano.
    • Rub the seasonings evenly over the chicken and place it into the baking dish.
  • Add Vegetables
    • Arrange zucchini slices, diced bell pepper, and diced tomato around and on top of the chicken.
  • Sprinkle with Oregano
    • Use the remaining oregano to sprinkle over the chicken and vegetables.
  • Bake Covered
    • Cover the baking dish with aluminum foil and bake for 25 minutes.
  • Add the Cheese
    • Remove the foil and sprinkle shredded mozzarella and crumbled feta evenly over the casserole.
  • Bake Uncovered
    • Return the dish to the oven and bake uncovered for an additional 15-20 minutes, until the cheese is melted and bubbly and the chicken reaches an internal temperature of 165°F (74°C).
  • Garnish and Serve
    • Let the casserole rest for a few minutes, garnish with chopped parsley if desired, and serve hot.

  • For a vegetarian option, replace the chicken with chickpeas, tofu, or eggplant.
  • Add a squeeze of fresh lemon juice before serving to brighten the flavors.
