Ingredients
- ¼ cup melted butter
- 1½ cups gluten-free cookie crumbs
- 16 oz cream cheese (softened)
- ½ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup pumpkin puree
- ½ tsp ground cinnamon
- ¼ tsp ground nutmeg
- ¼ tsp ground ginger
Instructions
- Prepare the Tray
- Preheat your oven to 350°F (175°C).
- Line an 8×8-inch baking tray with parchment paper, leaving edges hanging over the sides for easy removal.
- Make the Crust
- Mix gluten-free cookie crumbs with melted butter.
- Press the mixture firmly into the prepared tray.
- Bake for 10 minutes, then let cool.
- Prepare Cheesecake Batter
- Beat softened cream cheese and sugar until smooth.
- Add eggs and vanilla, mixing until combined.
- Add Pumpkin & Spices
- Reserve 1 cup of cheesecake batter.
- Mix the rest with pumpkin puree, cinnamon, nutmeg, and ginger.
- Assemble & Swirl
- Spread pumpkin cheesecake mixture evenly over the crust.
- Drop spoonfuls of the reserved plain batter on top and swirl gently.
- Bake & Chill
- Bake for 35-40 minutes, until set and slightly golden.
- Cool to room temperature, then chill in the refrigerator for at least 2 hours or overnight.
