Ingredients

  • ¼ cup melted butter
  • 1½ cups gluten-free cookie crumbs
  • 16 oz cream cheese (softened)
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp ground ginger

Instructions

  • Prepare the Tray
    • Preheat your oven to 350°F (175°C).
    • Line an 8×8-inch baking tray with parchment paper, leaving edges hanging over the sides for easy removal.
  • Make the Crust
    • Mix gluten-free cookie crumbs with melted butter.
    • Press the mixture firmly into the prepared tray.
    • Bake for 10 minutes, then let cool.
  • Prepare Cheesecake Batter
    • Beat softened cream cheese and sugar until smooth.
    • Add eggs and vanilla, mixing until combined.
  • Add Pumpkin & Spices
    • Reserve 1 cup of cheesecake batter.
    • Mix the rest with pumpkin puree, cinnamon, nutmeg, and ginger.
  • Assemble & Swirl
    • Spread pumpkin cheesecake mixture evenly over the crust.
    • Drop spoonfuls of the reserved plain batter on top and swirl gently.
  • Bake & Chill
    • Bake for 35-40 minutes, until set and slightly golden.
    • Cool to room temperature, then chill in the refrigerator for at least 2 hours or overnight.
