Ingredients
- 1 cup unsalted butter, softened
- ¾ cup white sugar
- ¾ cup light brown sugar
- 2 eggs (room temperature)
- 1 tsp strawberry extract
- 15 drops red/pink liquid food coloring
- 2 ⅔ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 20 Golden Oreos (for topping)
- 1 box (3.4 oz) strawberry Jello powder
- 4 tbsp butter, melted (for topping)
Instructions
- Preheat the Oven & Prepare Your Baking Sheet: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream the Butter and Sugars: In a large mixing bowl, cream together the softened butter, white sugar, and light brown sugar until light and fluffy.
- Add Eggs & Strawberry Extract: Add the eggs, one at a time, mixing well after each addition. Then, add the strawberry extract and stir until fully incorporated.
- Add Food Coloring: Add about 15 drops of red or pink liquid food coloring to the dough. Stir until the dough is evenly colored.
- Mix the Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Shape the Dough: Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
- Prepare the Topping: Crush the Golden Oreos into small pieces. In a small bowl, mix the crushed Oreos with the strawberry Jello powder and melted butter. Sprinkle this mixture generously over each cookie dough ball.
- Bake the Cookies: Bake the cookies for 10-12 minutes or until the edges are golden and the centers are set. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
- Use Room Temperature Ingredients: Make sure your butter and eggs are at room temperature for a smoother dough.
- Don’t Overmix: After adding the dry ingredients, mix the dough just until everything is incorporated.
- Chill the Dough (Optional): For thicker cookies, chill the dough for 30 minutes before baking.
- Watch the Baking Time: Every oven is different, so check the cookies at the 10-minute mark. They should be set and golden around the edges but soft in the center.
