Ingredients

Main Ingredients:

  • 1 pound ground Italian sausage
  • 16 ounces egg noodles (cooked al dente)
  • 2 medium green peppers, diced
  • 28 ounces diced tomatoes (with juice)
  • 3 teaspoons fresh garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon dried basil
  • ½ cup white cooking wine
  • Grated Parmesan cheese (for topping)
  • Fresh parsley, chopped (for garnish)
  • Salt and pepper to taste

Instructions

  1. Cook the Sausage and Peppers
    • Heat a large skillet over medium-high heat.
    • Add the ground Italian sausage and diced green peppers.
    • Cook until the sausage is browned and the peppers are slightly softened, about 5–7 minutes.
  2. Sauté the Garlic
    • Lower the heat to medium-low.
    • Stir in the minced garlic and Italian seasoning.
    • Sauté for about 30 seconds, or until the garlic is fragrant.
  3. Deglaze with White Wine
    • Pour in the white cooking wine, scraping the bottom of the skillet to release any browned bits.
    • Let the wine simmer until it reduces by half, about 3–4 minutes.
  4. Add the Tomatoes and Herbs
    • Pour the diced tomatoes, including their juice, into the skillet.
    • Stir in the dried basil and season with salt and pepper to taste.
    • Bring the mixture to a gentle simmer.
  5. Combine the Noodles
    • Add the cooked egg noodles to the skillet.
    • Gently fold them into the sauce, ensuring the noodles are evenly coated and heated through.
  6. Garnish and Serve
    • Remove the skillet from heat.
    • Sprinkle with freshly chopped parsley and grated Parmesan cheese.
    • Serve hot and enjoy!
