Ingredients
- For the Crust:
- 18 Oreo cookies (whole)
- 1/4 cup unsalted butter (melted)

- 3/4 cup heavy whipping cream
- 1 tbsp Baileys Irish Cream or Kahlua (optional)
- 1/2 tsp salt (optional but recommended)
- 1/2 cup mini semi-sweet chocolate chips
Instructions
- Prepare the Pan:
- Line a 9×9-inch pan with aluminum foil and lightly spray with cooking spray. Set aside.
- Make the Crust:
- Place Oreo cookies in a food processor and pulse until fine crumbs form.
- Melt butter and 1 tablespoon of dark chocolate in a microwave-safe bowl. Stir until smooth.
- Add the melted mixture to the cookie crumbs and blend until combined.
- Press the crumb mixture firmly into the bottom of the prepared pan to form an even crust.
- Prepare the Filling:
- Beat softened cream cheese in a large bowl with an electric mixer until fluffy.
- In a separate microwave-safe bowl, combine chopped dark chocolate and heavy cream. Heat in 30-second intervals, stirring after each, until melted and smooth.
- Mix the melted chocolate mixture into the cream cheese and beat until fully incorporated.
- Stir in Baileys Irish Cream or Kahlua and salt, if using.
- Assemble the Bars:
- Spread the chocolate cheesecake filling evenly over the prepared crust.
- Sprinkle mini chocolate chips over the top.
- Refrigerate for at least 3 hours or overnight to set.
- Slice and Serve:
- Once chilled, lift the dessert out of the pan using the foil overhang.
