With a balance of decadent chocolate and a subtle coffee kick, they are sure to impress and become a festive favorite.

Ingredients

  • All-purpose flour: 2 cups
  • Unsweetened cocoa powder: ¾ cup
  • Baking soda: 1 tsp
  • Salt: ½ tsp
  • Unsalted butter (room temp): 1 cup
  • Granulated sugar: 1 cup
  • Brown sugar (packed): ¾ cup
  • Eggs: 2 large
  • Pure vanilla extract: 1 tsp
  • Finely ground espresso beans: 2 tbsp
  • Semi-sweet or dark chocolate chips: 1 ½ cups

Instructions

  • Preheat Your Oven and Prepare Baking Sheet: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Mix the Dry Ingredients: In a medium-sized bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  • Cream the Butter and Sugars: In a large mixing bowl, use an electric mixer to cream together the butter, granulated sugar, and brown sugar until light and fluffy (about 2 minutes).
  • Add the Eggs and Vanilla: Beat in the eggs one at a time, then add the vanilla extract and finely ground espresso beans. Mix until well combined.
  • Combine the Dry Ingredients with the Wet Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Stir in the chocolate chips.
  • Shape the Dough and Bake: Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each dough ball slightly. Bake for 10-12 minutes, or until the edges are set and the centers are still soft.
  • Cool and Enjoy: Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Achieve Perfect Fudgy Texture: Do not overbake the cookies; they should still appear slightly soft in the center when removed from the oven.
  • Optional Chilling: For thicker cookies, chill the dough for 30 minutes before baking.
  • Espresso Substitutes: If you don’t have finely ground espresso beans, you can use instant coffee.
