Ingredients

Instructions

  1. Prepare the Pumpkin Pie Filling:
    • Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.
    • In a medium bowl, combine granulated sugar, brown sugar, flour, pumpkin pie spice, and salt. Mix until well blended.
    • In another bowl, whisk together the pumpkin purée, eggs, evaporated milk, and vanilla extract until smooth.
    • Gradually mix the dry ingredients into the wet ingredients, stirring until the batter is smooth and free of lumps.
  2. Bake the Filling:
    • Spoon the batter into the cupcake liners, filling them about three-quarters full.
    • Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
    • Allow the pumpkin cups to cool completely in the pan before removing them.
  3. Assemble the Parfaits:
    • In clear glasses or jars, add a layer of crushed graham crackers (if using) at the bottom.
    • Add a layer of the baked pumpkin filling, followed by a dollop of whipped cream.
    • Repeat the layers until the glass is full, finishing with whipped cream on top.
    • Garnish with a sprinkle of pumpkin pie spice or additional crushed graham crackers.
