Description

This no-bake Woolworth Cheesecake is a light, creamy, and refreshingly tangy dessert perfect for any occasion. With a buttery graham cracker crust and a hint of lemon, it’s an easy-to-make treat that will transport you back to the nostalgic lunch counters of the 1950s. Perfect for warm days or when you want a hassle-free dessert, this cheesecake is sure to become a favorite.

Ingredients

  • 1 package (3 oz) lemon Jell-O
  • 1 cup boiling water
  • 3 cups graham cracker crumbs (divided)
  • 1 stick (1/2 cup) melted butter
  • 8 oz cream cheese, softened
  • 1 cup granulated sugar
  • 5 tablespoons lemon juice
  • 1 can (12 oz) evaporated milk, chilled (or 1 1/2 cups heavy cream, chilled)

Instructions

  1. Dissolve the Lemon Jell-O:
    • In a medium bowl, dissolve the lemon Jell-O in 1 cup of boiling water. Stir well until completely dissolved.
    • Allow the Jell-O to cool until it thickens slightly. You can speed this up by refrigerating it for a few minutes, but don’t let it set completely.
  2. Prepare the Graham Cracker Crust:
    • In a large bowl, combine 2 1/4 cups of graham cracker crumbs with the melted butter. Mix thoroughly.
    • Press the mixture evenly into the bottom of a 9×13-inch pan to form the crust. Reserve the remaining 3/4 cup of crumbs for topping.
  3. Whip the Milk or Cream:
    • In a chilled mixing bowl, whip the evaporated milk or heavy cream until light and fluffy. Use a hand mixer or stand mixer for best results.
  4. Prepare the Filling:
    • In another large bowl, beat the softened cream cheese, granulated sugar, and lemon juice until smooth and creamy.
    • Gradually add the slightly thickened Jell-O, mixing continuously.
    • Fold in the whipped milk or cream gently to keep the mixture light and airy.
  5. Assemble the Cheesecake:
    • Spread the cheesecake filling evenly over the prepared crust.
    • Sprinkle the reserved graham cracker crumbs over the top for a classic finish.
  6. Chill to Set:
    • Refrigerate the cheesecake for at least 2 hours, or preferably overnight, to allow it to set fully and for the flavors to meld together.

Notes

  • Chill Ingredients: Ensure the evaporated milk or heavy cream is thoroughly chilled for the best whipping results.
  • Fresh Lemon Juice: Use fresh lemon juice for a brighter, more natural flavor.
  • Customize Toppings: Add fresh berries, fruit compote, or a drizzle of honey for an extra special touch.
