Ingredients
- 1 package (3 oz) lemon Jell-O
- 1 cup boiling water
- 3 cups graham cracker crumbs (divided)
- 1 stick (1/2 cup) melted butter
- 8 oz cream cheese, softened
- 1 cup granulated sugar
- 5 tablespoons lemon juice
- 1 can (12 oz) evaporated milk, chilled (or 1 1/2 cups heavy cream, chilled)
Instructions
- Dissolve the Lemon Jell-O:
- In a medium bowl, dissolve the lemon Jell-O in 1 cup of boiling water. Stir well until completely dissolved.
- Allow the Jell-O to cool until it thickens slightly. You can speed this up by refrigerating it for a few minutes, but don’t let it set completely.
- Prepare the Graham Cracker Crust:
- In a large bowl, combine 2 1/4 cups of graham cracker crumbs with the melted butter. Mix thoroughly.
- Press the mixture evenly into the bottom of a 9×13-inch pan to form the crust. Reserve the remaining 3/4 cup of crumbs for topping.
- Whip the Milk or Cream:
- In a chilled mixing bowl, whip the evaporated milk or heavy cream until light and fluffy. Use a hand mixer or stand mixer for best results.
- Prepare the Filling:
- In another large bowl, beat the softened cream cheese, granulated sugar, and lemon juice until smooth and creamy.
- Gradually add the slightly thickened Jell-O, mixing continuously.
- Fold in the whipped milk or cream gently to keep the mixture light and airy.
- Assemble the Cheesecake:
- Spread the cheesecake filling evenly over the prepared crust.
- Sprinkle the reserved graham cracker crumbs over the top for a classic finish.
- Chill to Set:
- Refrigerate the cheesecake for at least 2 hours, or preferably overnight, to allow it to set fully and for the flavors to meld together.
Notes
- Chill Ingredients: Ensure the evaporated milk or heavy cream is thoroughly chilled for the best whipping results.
- Fresh Lemon Juice: Use fresh lemon juice for a brighter, more natural flavor.
- Customize Toppings: Add fresh berries, fruit compote, or a drizzle of honey for an extra special touch.
