Ingredients
- 1¼ cups butter (softened)
 - 1 cup sugar
 - 2 large eggs (room temperature)
 - 3 cups all-purpose flour
 - 1 tablespoon baking cocoa
 - ½ teaspoon salt
 - ¼ teaspoon ground cinnamon
 - ¼ teaspoon ground nutmeg
 - ⅛ teaspoon ground cloves
 - 2 cups ground almonds
 - Raspberry jam (as needed)
 - Confectioners’ sugar (for dusting)
 
Instructions
- Prepare the Dough:
- Cream butter and sugar until light and fluffy.
 - Beat in eggs one at a time.
 - In a separate bowl, combine flour, baking cocoa, salt, cinnamon, nutmeg, and cloves. Gradually mix into the creamed mixture.
 - Stir in ground almonds. Cover and refrigerate for at least 1 hour.
 
 - Roll and Cut Cookies:
- Preheat oven to 350°F (175°C).
 - Roll out the dough to ⅛-inch thickness on a floured surface.
 - Cut out hearts using a 3-inch cookie cutter. From half the hearts, cut smaller hearts from the center to create a window.
 
 - Bake the Cookies:
- Place cookies on ungreased baking sheets.
 - Bake for 10-12 minutes or until edges are lightly golden.
 - Cool completely on wire racks.
 
 - Assemble the Cookies:
- Spread a thin layer of raspberry jam on the flat side of each solid heart.
 - Dust the cutout hearts with confectioners’ sugar, then place them on top of the jam-covered hearts to sandwich.
