Ingredients

  • 1¼ cups butter (softened)
  • 1 cup sugar
  • 2 large eggs (room temperature)
  • 3 cups all-purpose flour
  • 1 tablespoon baking cocoa
  • ½ teaspoon salt
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ⅛ teaspoon ground cloves
  • 2 cups ground almonds
  • Raspberry jam (as needed)
  • Confectioners’ sugar (for dusting)

Instructions

  • Prepare the Dough:
    • Cream butter and sugar until light and fluffy.
    • Beat in eggs one at a time.
    • In a separate bowl, combine flour, baking cocoa, salt, cinnamon, nutmeg, and cloves. Gradually mix into the creamed mixture.
    • Stir in ground almonds. Cover and refrigerate for at least 1 hour.
  • Roll and Cut Cookies:
    • Preheat oven to 350°F (175°C).
    • Roll out the dough to ⅛-inch thickness on a floured surface.
    • Cut out hearts using a 3-inch cookie cutter. From half the hearts, cut smaller hearts from the center to create a window.
  • Bake the Cookies:
    • Place cookies on ungreased baking sheets.
    • Bake for 10-12 minutes or until edges are lightly golden.
    • Cool completely on wire racks.
  • Assemble the Cookies:
    • Spread a thin layer of raspberry jam on the flat side of each solid heart.
    • Dust the cutout hearts with confectioners’ sugar, then place them on top of the jam-covered hearts to sandwich.
