Instructions

  • Prepare the Crust:
    • Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan.
    • Combine graham cracker crumbs, sugar, and melted butter in a bowl. Mix until the texture resembles wet sand.
    • Press the mixture evenly into the bottom of the springform pan.
    • Bake for 10 minutes and set aside to cool.
  • Create the Cheesecake Filling:
    • Beat softened cream cheese, sugar, and flour in a large mixing bowl until smooth.
    • Add vanilla extract, lime zest, and lime juice. Mix until combined.
    • Incorporate the eggs one at a time, beating gently after each addition to avoid overmixing.
    • If desired, swirl in green food coloring for a vibrant look.
  • Bake the Cheesecake:
    • Pour the cheesecake batter over the cooled crust and smooth the top.
    • Bake for 50–60 minutes, or until the edges are set, but the center jiggles slightly.
    • Turn off the oven, crack the door open, and let the cheesecake cool inside for 1 hour.
    • Refrigerate for at least 4 hours or overnight.
  • Prepare the Whipped Topping:
    • Whip heavy cream and powdered sugar in a chilled bowl until stiff peaks form.
