Ingredients

  • Meyer lemon juice: 1 1/2 cups (355 ml)
  • Refined white sugar: 1 1/2 cups (300 g)
  • Meyer lemon peel strips: 3 strips (from fresh lemons)
  • Vanilla extract (optional): 1 teaspoon

Instructions

  • Combine Lemon Juice and Sugar:
    • In a medium saucepan, mix 1 cup (240 ml) of Meyer lemon juice with sugar.
    • Stir until the sugar begins to dissolve.
  • Heat the Mixture:
    • Place the saucepan over medium heat and bring the mixture to a boil.
    • Stir constantly until the sugar is fully dissolved.
  • Simmer with Lemon Peel:
    • Reduce the heat to a simmer.
    • Add the Meyer lemon peel strips and cook for 10–15 minutes, stirring occasionally, until the mixture thickens slightly.
  • Steep for Enhanced Flavor:
    • Remove the saucepan from heat.
    • Cover and let the syrup steep for 15 minutes at room temperature.
  • Add Final Ingredients:
    • Stir in the remaining 1/2 cup (120 ml) Meyer lemon juice.
    • Add the vanilla extract, if using, for a subtle depth of flavor.
  • Strain and Store:
    • Strain the syrup through a fine mesh sieve to remove the lemon peel.
    • Transfer the syrup to a clean, airtight container and refrigerate.
