Ingredients
- Meyer lemon juice: 1 1/2 cups (355 ml)
- Refined white sugar: 1 1/2 cups (300 g)
- Meyer lemon peel strips: 3 strips (from fresh lemons)
- Vanilla extract (optional): 1 teaspoon
Instructions
- Combine Lemon Juice and Sugar:
- In a medium saucepan, mix 1 cup (240 ml) of Meyer lemon juice with sugar.
- Stir until the sugar begins to dissolve.
- Heat the Mixture:
- Place the saucepan over medium heat and bring the mixture to a boil.
- Stir constantly until the sugar is fully dissolved.
- Simmer with Lemon Peel:
- Reduce the heat to a simmer.
- Add the Meyer lemon peel strips and cook for 10–15 minutes, stirring occasionally, until the mixture thickens slightly.
- Steep for Enhanced Flavor:
- Remove the saucepan from heat.
- Cover and let the syrup steep for 15 minutes at room temperature.
- Add Final Ingredients:
- Stir in the remaining 1/2 cup (120 ml) Meyer lemon juice.
- Add the vanilla extract, if using, for a subtle depth of flavor.
- Strain and Store:
- Strain the syrup through a fine mesh sieve to remove the lemon peel.
- Transfer the syrup to a clean, airtight container and refrigerate.
