Ingredients

Shortcake Coating:

  • 4 golden Oreo cookies
  • ½ cup freeze-dried strawberries

Instructions

  1. Prepare the Ice Cream Base:
    • Scoop the softened strawberry ice cream into a mixing bowl and stir until pourable but not melted.
    • Pour the ice cream into popsicle molds, insert a stick into each mold, and freeze for at least 4 hours or until solid.
  2. Make the Shortcake Coating:
    • In a food processor, pulse the golden Oreo cookies and freeze-dried strawberries until fine crumbs form.
    • Transfer the crumbs to a shallow dish and set aside.
  3. Prepare the White Chocolate Drizzle:
    • Combine white chocolate chips and avocado oil in a microwave-safe bowl.
    • Microwave for 30 seconds, then stir until smooth. Let the mixture cool for 5 minutes.
  4. Assemble the Ice Cream Bars:
    • Remove the popsicles from the molds by briefly dipping the mold in warm water.
    • Drizzle one side of each bar with the white chocolate mixture.
    • Press the chocolate-coated side into the shortcake crumb mixture.
    • Repeat on the other side of the bar, ensuring full coverage.
  5. Freeze Again:
    • Place the coated bars on a cold, parchment-lined baking sheet.
    • Freeze for an additional 1 hour or until the coating is set.
