- ½ cup freeze-dried strawberries
Instructions
- Prepare the Ice Cream Base:
- Scoop the softened strawberry ice cream into a mixing bowl and stir until pourable but not melted.
- Pour the ice cream into popsicle molds, insert a stick into each mold, and freeze for at least 4 hours or until solid.
- Make the Shortcake Coating:
- In a food processor, pulse the golden Oreo cookies and freeze-dried strawberries until fine crumbs form.
- Transfer the crumbs to a shallow dish and set aside.
- Prepare the White Chocolate Drizzle:
- Combine white chocolate chips and avocado oil in a microwave-safe bowl.
- Microwave for 30 seconds, then stir until smooth. Let the mixture cool for 5 minutes.
- Assemble the Ice Cream Bars:
- Remove the popsicles from the molds by briefly dipping the mold in warm water.
- Drizzle one side of each bar with the white chocolate mixture.
- Press the chocolate-coated side into the shortcake crumb mixture.
- Repeat on the other side of the bar, ensuring full coverage.
- Freeze Again:
- Place the coated bars on a cold, parchment-lined baking sheet.
- Freeze for an additional 1 hour or until the coating is set.
