Ingredients

  • 4 lbs Yukon Gold potatoes, peeled and cut into chunks
  • 1/2 cup unsalted butter, softened (plus extra for greasing and topping)
  • 4 oz cream cheese, softened
  • 1 cup sour cream
  • 1/2 cup whole milk or heavy cream (adjust as needed for consistency)
  • 2 teaspoons garlic powder (optional)
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • 1/2 cup Parmesan cheese, grated (optional, for topping)
  • Fresh chives or parsley, chopped (for garnish)

Instructions

  • Prepare the Potatoes:
    • Preheat your oven to 375°F (190°C).
    • Generously grease a 9×13-inch baking dish with butter.
    • Place the peeled and chopped potatoes in a large pot. Cover with cold, salted water and bring to a boil over medium-high heat.
    • Cook for 15–20 minutes, or until the potatoes are fork-tender.
  • Mash the Potatoes:
    • Drain the cooked potatoes and return them to the pot. Let them steam for 1–2 minutes to remove excess moisture.
    • Mash the potatoes using a masher or ricer until smooth.
    • Mix in the softened butter, cream cheese, sour cream, and milk. Stir until creamy and well combined.
    • Add garlic powder (if using), salt, and black pepper. Adjust seasoning to taste.
  • Assemble the Dish:
    • Transfer the mashed potatoes to the prepared baking dish, spreading them out evenly.
    • Dot the top with small pieces of butter and sprinkle with Parmesan cheese, if desired.
  • Bake:
    • Place the dish in the preheated oven and bake for 25–30 minutes, or until the top is golden and slightly crisp.
  • Garnish and Serve:
    • Let the dish cool for 5 minutes before serving.
    • Garnish with freshly chopped chives or parsley for added color and freshness.

Notes

  • Potato Choice: Yukon Gold potatoes are preferred for their creamy texture, but Russet potatoes work as a substitute.
  • Customize the Flavor: Add roasted garlic, shredded cheese, or crispy bacon bits for extra indulgence.
  • Make-Ahead Option: Assemble the dish a day in advance and refrigerate. Bake as directed when ready to serve.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days.
