Ingredients
For the Banana Dough
- ¾ cup warm milk (110℉)
- 2¼ teaspoons active dry yeast (1 packet)
- 1 large egg, room temperature
- ⅔ cup mashed ripe bananas (about 2 medium bananas)
- 5¼ cups all-purpose flour
- 1 teaspoon salt
- ¼ cup granulated sugar
- 10 tablespoons unsalted butter, cubed and at room temperature
For the Cinnamon Filling
- ½ cup unsalted butter, room temperature
- ¾ cup light or dark brown sugar
- 1 tablespoon ground cinnamon
- 2 ripe bananas, thinly sliced
For the Cream Cheese Icing
- 4 ounces cream cheese, room temperature
- 4 tablespoons unsalted butter, room temperature
- 1 cup powdered sugar, sifted
- 1 teaspoon pure vanilla extract
Instructions
Prepare the Dough:
- Warm the milk to 110℉ and sprinkle the yeast on top. Let sit for 10 minutes until foamy.
- In a large bowl, combine flour, sugar, and salt. Mix in the cubed butter until crumbly.
- Add the yeast mixture, mashed bananas, and egg. Mix until a dough forms.
- Knead the dough on medium speed (stand mixer with dough hook) or by hand for 5-7 minutes until smooth and slightly sticky.
- Place the dough in a greased bowl, cover, and let rise in a warm place for 1 hour or until doubled in size.
2. Prepare the Filling:
- Beat butter until smooth. Add brown sugar and cinnamon, mixing until combined.
3. Assemble the Rolls:
- Roll out the dough on a floured surface into a rectangle (about ¼ inch thick).
- Spread the cinnamon filling evenly over the dough. Arrange sliced bananas on top.
- Roll the dough tightly into a log and cut into 12 even slices.
4. Second Rise:
- Place rolls into a greased 9×13-inch baking dish. Cover and let rise for 20 minutes.
5. Bake:
- Preheat the oven to 375℉. Bake rolls for 28-33 minutes until golden brown.
6. Make the Icing:
- Beat cream cheese and butter together until creamy. Add powdered sugar and vanilla extract, mixing until smooth.
7. Serve:
- Spread the icing over warm rolls and serve immediately.
