This Sprinkle Cheesecake with Golden Oreo Crust is a colorful, no-bake dessert perfect for celebrations or casual indulgence. With a creamy filling, crunchy Golden Oreo crust, and festive rainbow sprinkles, this cheesecake is as delightful to look at as it is to eat.

Ingredients

For the Crust:

  • 24 Golden Oreo cookies, crushed
  • 5 tablespoons unsalted butter, melted

For the Filling:

  • 16 oz (2 blocks) cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups heavy cream, cold
  • 1215 chopped Oreo cookies
  • 1/4 cup rainbow sprinkles

For the Toppings:

  • Whipped cream (as needed)
  • Whole Oreo cookies (as needed)
  • Extra rainbow sprinkles (as needed)

Instructions

Prepare the Golden Oreo Crust:

  1. Crush the cookies into fine crumbs using a food processor or by placing them in a zip-top bag and crushing with a rolling pin.
  2. Mix the cookie crumbs with melted butter until the mixture resembles wet sand.
  3. Press the crumb mixture firmly into the bottom of a 9-inch springform pan to form an even layer.
  4. Chill the crust in the refrigerator while preparing the filling.

2. Make the Cheesecake Filling:

  1. In a large mixing bowl, beat the softened cream cheese and powdered sugar until smooth and creamy.
  2. Stir in the vanilla extract until fully incorporated.
  3. In a separate bowl, whip the cold heavy cream until stiff peaks form.
  4. Gently fold the whipped cream into the cream cheese mixture until fully combined.
  5. Fold in the chopped Oreo cookies and rainbow sprinkles, distributing them evenly throughout the filling.

3. Assemble the Cheesecake:

  1. Pour the cheesecake filling over the prepared crust, smoothing the top with a spatula.
  2. Cover the pan with plastic wrap or foil and refrigerate for at least 4 hours, or overnight, until fully set.

4. Decorate and Serve:

  1. Top the cheesecake with whipped cream, whole Oreo cookies, and extra rainbow sprinkles before serving.
  2. Slice the cheesecake using a sharp knife and enjoy this colorful, creamy dessert.
