- 1 cup (240 ml) heavy cream
- 1 teaspoon vanilla extract
Instructions
- Prepare the Dates:
- Place the chopped dates in a heatproof bowl.
- Pour the boiling water over them and stir in the baking soda.
- Let the mixture sit for 15–20 minutes to soften.
- Preheat the Oven:
- Preheat the oven to 350°F (175°C). Grease an 8-inch square baking pan or line it with parchment paper.
- Mix Dry Ingredients:
- In a medium bowl, whisk together the flour, baking powder, salt, and ground cinnamon.
- Cream Butter and Sugar:
- In a large mixing bowl, beat the softened butter and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Combine Wet and Dry Mixtures:
- Blend the softened date mixture (including the liquid) into the butter mixture.
- Gradually fold in the dry ingredients until just combined.
- Bake the Pudding:
- Pour the batter into the prepared pan and spread it evenly.
