Ingredients

For the Dough:

  • 2 large eggs, room temperature
  • ½ cup white granulated sugar
  • 4 cups all-purpose flour
  • 1 tsp salt

For the Strawberry Jam:

  • 2 cups fresh strawberries, hulled and chopped
  • 1 tsp fresh lemon juice
  • ⅓ cup white granulated sugar
  • 1 tbsp water
  • 2 tbsp cornstarch

For the Lemon Cream Cheese Icing:

  • 4 oz cream cheese, softened
  • 2 tbsp butter, softened
  • 1 cup powdered sugar
  • Zest of 1 lemon
  • 2 tbsp whole milk

Instructions

  • Prepare the Dough:
    • In a small bowl, stir together warm milk, yeast, and ¼ tsp sugar. Let sit for 10 minutes until frothy.
    • In a stand mixer bowl, combine eggs, melted butter, and yeast mixture.
    • Gradually add flour, sugar, and salt, mixing on low speed until a dough forms.
    • Knead on medium speed for 5 minutes or until smooth and elastic.
    • Place the dough in a greased bowl, cover with a towel, and let rise for 1 hour or until doubled in size.
  • Make the Strawberry Jam:
    • In a saucepan, combine strawberries, sugar, and lemon juice. Cook over medium heat until strawberries release their juices.
    • Mash the strawberries and stir in the cornstarch slurry (cornstarch mixed with water).
    • Cook for 2–3 more minutes until thickened. Transfer to a bowl and cool completely.
  • Assemble the Rolls:
    • Roll out the dough on a floured surface into a large rectangle about ¼ inch thick.
    • Spread the cooled strawberry jam evenly over the dough, leaving a small border around the edges.
    • Roll the dough tightly into a log and cut into 12 even slices.
  • Bake the Rolls:
    • Arrange rolls in a greased 9×13-inch baking dish. Cover and let rise for 30 minutes.
