  • 2 large eggs, room temperature
  • ¼ cup vegetable oil
  • 2 tsp vanilla extract

For the Dry Ingredients:

  • ⅔ cup dark cocoa powder
  • 1 cup all-purpose flour
  • ¼ tsp baking powder
  • ¾ tsp salt

For the Add-Ins and Toppings:

  • 2 cups chopped Oreo cookies
  • 8 whole Oreo cookies (for topping)

Instructions

  • Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
    • Grease an 8×8-inch baking pan and line it with parchment paper, leaving an overhang for easy removal.
  • Prepare the Wet Ingredients:
    • In a microwave-safe bowl, melt the butter with the brown sugar. Heat for 90 seconds, stirring halfway through, until fully melted.
    • In a separate large bowl, whisk together the eggs and granulated sugar until pale and fluffy. Gradually mix in the melted butter mixture.
    • Add the vegetable oil and vanilla extract, mixing until smooth.
  • Combine the Dry Ingredients:
    • Sift together the cocoa powder, flour, baking powder, and salt in a medium bowl.
    • Gradually add the dry ingredients to the wet mixture, folding gently until just combined.
  • Incorporate the Oreos:
    • Fold in 2 cups of chopped Oreo cookies, ensuring they’re evenly distributed.
  • Assemble and Bake:
    • Pour the batter into the prepared baking pan, spreading it evenly with an offset spatula.
    • Press the whole Oreo cookies onto the surface for decoration.
    • Bake for 30–35 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  • Cool and Slice:
    • Let the brownies cool completely in the pan. Use the parchment overhang to lift them out onto a cutting board.
