Ingredients
For the Crust:
- 1 cup graham cracker crumbs
- 2 tbsp granulated sugar
- 4 tbsp unsalted butter, melted
For the Cheesecake Filling:
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1/2 cup sour cream
- 1/2 cup heavy cream
- Seeds from 1 vanilla bean
- 1 tsp vanilla extract
For the Crème Brûlée Topping:
- 1/4 cup granulated sugar
Instructions
. Prepare the Crust:
- Preheat your oven to 325°F (160°C) and line a muffin tin with cupcake liners.
- In a medium bowl, mix the graham cracker crumbs, granulated sugar, and melted butter until well combined.
- Spoon about 1 tablespoon of the crust mixture into each liner. Use the back of a spoon to press the mixture firmly into the bottom.
- Bake for 5 minutes, then set aside to cool while preparing the filling.
2. Make the Cheesecake Filling:
- In a large mixing bowl, beat the softened cream cheese and sugar until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the sour cream, heavy cream, vanilla bean seeds, and vanilla extract until fully combined.
3. Assemble and Bake:
- Divide the cheesecake batter evenly among the prepared liners, filling each about 3/4 full.
- Bake in the preheated oven for 20-25 minutes, or until the centers are set and the tops are slightly puffed.
- Remove from the oven and let cool to room temperature. Refrigerate for at least 2 hours or until fully chilled.
4. Caramelize the Topping:
- Just before serving, sprinkle about 1 teaspoon of granulated sugar evenly over the top of each cupcake.
- Use a kitchen torch to caramelize the sugar until it melts and turns a golden amber color. Let the sugar harden for a few minutes before serving.
