Ingredients

For the Corn Salsa:

  • Cooked corn kernels: 2 cups
  • Diced red onion: ½ cup
  • Peeled, diced jicama: 1 cup
  • Diced red bell pepper: ½ cup
  • Fresh cilantro leaves, chopped: 1 cup
  • Lime, juiced and zested: 1 lime

For the Fish:

  • Tilapia fillets (4 ounces each): 6 fillets
  • Olive oil: 2 tablespoons
  • Cayenne pepper: 2 tablespoons
  • Ground black pepper: 1 tablespoon
  • Salt: 2 tablespoons

To Serve:

  • Corn tortillas, warmed: 12 tortillas
  • Sour cream: 2 tablespoons

Instructions

Step 1: Prepare the Corn Salsa

  1. In a medium bowl, combine corn kernels, red onion, jicama, red bell pepper, and cilantro.
  2. Add the juice and zest of one lime, stirring to combine.
  3. Set aside to let the flavors meld while preparing the fish.

Step 2: Season the Fish

  1. In a small bowl, mix cayenne pepper, ground black pepper, and salt.
  2. Brush the tilapia fillets with olive oil on both sides.
  3. Sprinkle the spice mix evenly over the fish.

Step 3: Cook the Fish

  1. Preheat the grill to high heat (or use a skillet if a grill is unavailable).
  2. Place the fillets directly on the grill grate. Cook for about 3 minutes per side until the fish flakes easily with a fork.

Step 4: Assemble the Tacos

  1. Stack two warmed corn tortillas for each taco.
  2. Place a cooked fillet onto the tortillas.
  3. Top with a dollop of sour cream and a generous serving of the prepared corn salsa.
  4. Serve immediately, garnished with additional cilantro if desired.

Notes

  • For a milder flavor, reduce or omit the cayenne pepper.
  • Feel free to customize the tacos with sliced avocado, shredded cabbage, or a drizzle of hot sauce for extra heat.
  • If using frozen fish, ensure it’s fully thawed and patted dry before cooking.
