Ingredients

  • Cooking spray (as needed)
  • 1 pound ground beef
  • 1/2 cup chopped onion
  • 1 (15-ounce) can tomato sauce
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (14.5-ounce) can diced tomatoes with lime juice and cilantro
  • 1 (8.75-ounce) can whole kernel sweet corn, drained
  • 1 (4.5-ounce) can chopped green chiles, drained
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon minced garlic
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 6 flour tortillas
  • 2 cups shredded Cheddar cheese

Instructions

 Preheat Your Oven

  • Preheat your oven to 350°F (175°C).
  • Lightly grease a 9×13-inch baking dish with cooking spray.

2. Cook the Beef Mixture

  1. Heat a large skillet over medium-high heat. Add the ground beef and onion, cooking until the beef is browned and the onion is tender (5-7 minutes).
  2. Drain any excess grease.

3. Add the Sauce and Seasonings

  1. Stir in the tomato sauce, black beans, diced tomatoes, corn, and green chiles.
  2. Add chili powder, cumin, garlic, oregano, and red pepper flakes.
  3. Reduce the heat to low and let the mixture simmer for 5 minutes.

4. Assemble the Casserole

  1. Spread 1/2 cup of the beef mixture across the bottom of the prepared baking dish.
  2. Layer 3 tortillas over the beef mixture, overlapping as needed.
  3. Spread another 1/2 cup of the beef mixture on top of the tortillas, followed by 1 cup of shredded cheese.
  4. Repeat the layers with the remaining tortillas, beef mixture, and cheese.

5. Bake the Casserole

  • Place the baking dish in the preheated oven and bake for 15 minutes, or until the cheese is melted and bubbly.

6. Cool and Serve

  • Let the casserole cool for 5 minutes before slicing.
  • Serve warm with your favorite toppings like sour cream, guacamole, or fresh cilantro.
