Ingredients

- 1 pound ground beef
- 1/2 cup chopped onion
- 1 (15-ounce) can tomato sauce
- 1 (15-ounce) can black beans, rinsed and drained
- 1 (14.5-ounce) can diced tomatoes with lime juice and cilantro
- 1 (8.75-ounce) can whole kernel sweet corn, drained
- 1 (4.5-ounce) can chopped green chiles, drained
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon minced garlic
- 1/2 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- 6 flour tortillas
- 2 cups shredded Cheddar cheese
Instructions
Preheat Your Oven
- Preheat your oven to 350°F (175°C).
- Lightly grease a 9×13-inch baking dish with cooking spray.
2. Cook the Beef Mixture
- Heat a large skillet over medium-high heat. Add the ground beef and onion, cooking until the beef is browned and the onion is tender (5-7 minutes).
- Drain any excess grease.
3. Add the Sauce and Seasonings
- Stir in the tomato sauce, black beans, diced tomatoes, corn, and green chiles.
- Add chili powder, cumin, garlic, oregano, and red pepper flakes.
- Reduce the heat to low and let the mixture simmer for 5 minutes.
4. Assemble the Casserole
- Spread 1/2 cup of the beef mixture across the bottom of the prepared baking dish.
- Layer 3 tortillas over the beef mixture, overlapping as needed.
- Spread another 1/2 cup of the beef mixture on top of the tortillas, followed by 1 cup of shredded cheese.
- Repeat the layers with the remaining tortillas, beef mixture, and cheese.
5. Bake the Casserole
- Place the baking dish in the preheated oven and bake for 15 minutes, or until the cheese is melted and bubbly.
6. Cool and Serve
- Let the casserole cool for 5 minutes before slicing.
- Serve warm with your favorite toppings like sour cream, guacamole, or fresh cilantro.
