Ingredients

 - 8 ounces dry fettuccine (or pasta of choice)

 - 1 ¼ cups low-fat cottage cheese
 - 1 cup 2% milk
 - 1 ounce Parmesan cheese, shredded (about ⅓ cup packed)
 - 2 small cloves garlic, finely chopped
 - 3 tablespoons unsalted butter, softened
 - 1 tablespoon all-purpose flour
 - 3 ounces baby spinach
 - Crushed red pepper flakes, for garnish
 
Instructions
- Cook the Pasta:
- Bring a large pot of salted water to a boil.
 - Add the fettuccine and cook until very al dente, about 1 minute less than the package instructions.
 - Reserve ½ cup of the pasta water, then drain the pasta. Toss with olive oil to prevent sticking and set aside.
 
 - Prepare the Alfredo Sauce:
- In a blender or food processor, combine cottage cheese, milk, Parmesan, garlic, butter, flour, and 1 teaspoon salt. Blend until smooth and creamy.
 - Pour the sauce into a large skillet and heat over medium heat.
 - Simmer the sauce, stirring frequently, for 8–10 minutes until it thickens slightly.
 
 - Add Spinach to the Sauce:
- Stir in the baby spinach and cook until wilted, about 1–2 minutes.
 
 - Combine Pasta and Sauce:
- Add the cooked pasta to the skillet and toss to coat evenly in the sauce.
 - If the sauce is too thick, add the reserved pasta water a little at a time until you reach your desired consistency.
 
 - Serve and Garnish:
- Divide the pasta among serving bowls.
 - Sprinkle with crushed red pepper flakes for a hint of heat and serve immediately.
