  • 3 ounces baby spinach

Instructions

  • Cook the Pasta:
    • Bring a large pot of salted water to a boil.
    • Add the fettuccine and cook until very al dente, about 1 minute less than the package instructions.
    • Reserve ½ cup of the pasta water, then drain the pasta. Toss with olive oil to prevent sticking and set aside.
  • Prepare the Alfredo Sauce:
    • In a blender or food processor, combine cottage cheese, milk, Parmesan, garlic, butter, flour, and 1 teaspoon salt. Blend until smooth and creamy.
    • Pour the sauce into a large skillet and heat over medium heat.
    • Simmer the sauce, stirring frequently, for 8–10 minutes until it thickens slightly.
  • Add Spinach to the Sauce:
    • Stir in the baby spinach and cook until wilted, about 1–2 minutes.
  • Combine Pasta and Sauce:
    • Add the cooked pasta to the skillet and toss to coat evenly in the sauce.
    • If the sauce is too thick, add the reserved pasta water a little at a time until you reach your desired consistency.
  • Serve and Garnish:
    • Divide the pasta among serving bowls.
    • Sprinkle with crushed red pepper flakes for a hint of heat and serve immediately.
