Ingredients

  • Reduced-fat sour cream: ¼ cup
  • Lime juice: 2 tablespoons
  • Salt: To taste
  • Ground black pepper: To taste
  • Jalapeño pepper (halved): 1
  • Shredded red cabbage: 2 ½ cups
  • Green onions (thinly sliced): 4
  • Olive oil: 2 tablespoons
  • Tilapia fillets (cut into strips): 1 pound
  • Flour tortillas (6-inch): 8
  • Fresh cilantro (chopped): ½ cup

Instructions

Prepare the Dressing

  1. In a large bowl, mix the sour cream and lime juice until smooth.
  2. Season with a pinch of salt and black pepper. Reserve half the mixture in a separate bowl for serving.

2. Make the Cabbage Slaw

  1. Finely mince half the jalapeño (reserve the other half).
  2. Toss the shredded red cabbage, sliced green onions, and minced jalapeño into the remaining sour cream mixture. Mix well until the slaw is evenly coated.

3. Cook the Fish

  1. Heat olive oil in a large skillet over medium heat. Add the reserved jalapeño half for extra flavor.
  2. Season the tilapia strips with salt and pepper.
  3. Pan-fry the fish in batches, cooking each side for 5-6 minutes or until golden and flaky. Discard the jalapeño half after cooking.

4. Warm the Tortillas

Heat the tortillas in the microwave for 20-30 seconds or in a dry skillet until pliable.

5. Assemble the Tacos

  1. Fill each tortilla with a few strips of cooked fish.
  2. Top with the cabbage slaw, a drizzle of the reserved sour cream dressing, and a sprinkle of fresh cilantro.

  • Fish Alternatives: Cod, mahi-mahi, or halibut are excellent substitutes for tilapia.
