Ingredients
- 1 lb ground beef
- 1 tablespoon olive oil
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning (or 2 tablespoons homemade)
- 1 (15 oz) can enchilada sauce
- 6 flour or corn tortillas
- 2 cups shredded Mexican cheese blend
- 1 cup black beans, drained and rinsed
- ½ cup corn kernels (optional)
- 2 tablespoons fresh cilantro, chopped (for garnish)
Instructions
- Sauté the Onion and Garlic
- Heat olive oil in a large skillet over medium heat.
- Add the diced onion and sauté for 3–4 minutes until softened.
- Stir in minced garlic and cook for 30 seconds until fragrant.
- Cook the Ground Beef
- Add ground beef to the skillet and cook for 6–8 minutes, breaking it up with a spoon, until browned.
- Drain any excess grease.
- Season the Beef
- Sprinkle taco seasoning over the beef and stir well.
- Add a splash of water (about ¼ cup) to evenly coat the beef in the seasoning.
- Add Enchilada Sauce and Fillings
- Pour half of the enchilada sauce into the skillet and mix with the beef.
- Stir in black beans and corn, ensuring even distribution.
- Layer the Tortillas
- Spread a thin layer of the beef mixture across the bottom of the skillet.
- Place a tortilla on top, followed by another layer of beef mixture and shredded cheese.
- Repeat with remaining tortillas, beef mixture, and cheese, ending with cheese on top.
- Cook the Enchiladas
- Reduce heat to low, cover the skillet, and cook for 10–12 minutes until the cheese is melted and bubbly.
- Garnish and Serve
- Remove from heat and garnish with fresh cilantro.
