Ingredients

  • 1 lb ground beef

  • 6 flour or corn tortillas
  • 2 cups shredded Mexican cheese blend
  • 1 cup black beans, drained and rinsed
  • ½ cup corn kernels (optional)
  • 2 tablespoons fresh cilantro, chopped (for garnish)

Instructions

  • Sauté the Onion and Garlic
    • Heat olive oil in a large skillet over medium heat.
    • Add the diced onion and sauté for 3–4 minutes until softened.
    • Stir in minced garlic and cook for 30 seconds until fragrant.
  • Cook the Ground Beef
    • Add ground beef to the skillet and cook for 6–8 minutes, breaking it up with a spoon, until browned.
    • Drain any excess grease.
  • Season the Beef
    • Sprinkle taco seasoning over the beef and stir well.
    • Add a splash of water (about ¼ cup) to evenly coat the beef in the seasoning.
  • Add Enchilada Sauce and Fillings
    • Pour half of the enchilada sauce into the skillet and mix with the beef.
    • Stir in black beans and corn, ensuring even distribution.
  • Layer the Tortillas
    • Spread a thin layer of the beef mixture across the bottom of the skillet.
    • Place a tortilla on top, followed by another layer of beef mixture and shredded cheese.
    • Repeat with remaining tortillas, beef mixture, and cheese, ending with cheese on top.
  • Cook the Enchiladas
