Ingredients

  • 12 cooked breakfast sausage links
  • 1 ½ cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 4 teaspoons baking powder
  • ½ teaspoon fine sea salt
  • 1 ⅓ cups buttermilk
  • 1 large egg, well beaten
  • 4 tablespoons unsalted butter, melted

Instructions

  • Prepare the Sausage Links
    • Cook the breakfast sausage links according to the package instructions and set them aside to cool slightly.
  • Make the Pancake Batter
    • In a large bowl, whisk together the flour, sugar, baking powder, and salt until evenly combined.
    • In a separate bowl, whisk the buttermilk, beaten egg, melted butter, and vanilla extract until smooth.
    • Pour the wet mixture into the dry ingredients and stir gently until combined (do not overmix). Let the batter sit for 5 minutes to thicken slightly.
  • Cook the Pancakes
    • Heat a non-stick skillet over medium heat and lightly grease it with cooking spray.
    • Scoop about 3 tablespoons of batter onto the skillet for each pancake and gently spread into a small circle.
    • Cook for 2–3 minutes until bubbles form on the surface and the bottom is golden brown. Flip and cook for another 2–3 minutes until both sides are golden.
    • Remove pancakes from the skillet and set aside.
  • Assemble the Mini Pigs in a Blanket
    • Place a cooked sausage link in the center of a warm pancake.
    • Roll the pancake tightly around the sausage, with the seam side down to secure it.
    • Repeat with the remaining pancakes and sausage links.
  • Serve and Enjoy
    • Arrange the mini pigs in a blanket on a platter. Drizzle with maple syrup or serve with a small bowl of syrup for dipping. Enjoy warm!
