Ingredients
- 12 cooked breakfast sausage links
- 1 ½ cups all-purpose flour
- 2 tablespoons granulated sugar
- 4 teaspoons baking powder
- ½ teaspoon fine sea salt
- 1 ⅓ cups buttermilk
- 1 large egg, well beaten
- 4 tablespoons unsalted butter, melted
Instructions
- Prepare the Sausage Links
- Cook the breakfast sausage links according to the package instructions and set them aside to cool slightly.
- Make the Pancake Batter
- In a large bowl, whisk together the flour, sugar, baking powder, and salt until evenly combined.
- In a separate bowl, whisk the buttermilk, beaten egg, melted butter, and vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients and stir gently until combined (do not overmix). Let the batter sit for 5 minutes to thicken slightly.
- Cook the Pancakes
- Heat a non-stick skillet over medium heat and lightly grease it with cooking spray.
- Scoop about 3 tablespoons of batter onto the skillet for each pancake and gently spread into a small circle.
- Cook for 2–3 minutes until bubbles form on the surface and the bottom is golden brown. Flip and cook for another 2–3 minutes until both sides are golden.
- Remove pancakes from the skillet and set aside.
- Assemble the Mini Pigs in a Blanket
- Place a cooked sausage link in the center of a warm pancake.
- Roll the pancake tightly around the sausage, with the seam side down to secure it.
- Repeat with the remaining pancakes and sausage links.
- Serve and Enjoy
- Arrange the mini pigs in a blanket on a platter. Drizzle with maple syrup or serve with a small bowl of syrup for dipping. Enjoy warm!
