Description

These Perfect Raspberry Shortbread Cookies are the ideal homemade gift—easy to make, elegant, and irresistible. With a buttery shortbread base, a sweet raspberry jam center, and a delicate white chocolate drizzle, these cookies are as delightful to give as they are to receive. Perfect for any occasion, they offer a personal touch that will make your loved ones feel special.

Ingredients

  • Unsalted butter: 1 cup (softened)
  • Granulated sugar: 1/2 cup
  • All-purpose flour: 2 cups
  • Vanilla extract: 1/2 tsp
  • Raspberry jam: 1/2 cup (high-quality jam)
  • White chocolate: 1/4 cup (melted)

Instructions

  • Preparing the Dough:
    • In a large mixing bowl, beat the softened butter and granulated sugar until light and fluffy. This will create the perfect buttery texture for your cookies.
    • Add the vanilla extract and mix until combined.
    • Gradually incorporate the flour into the butter-sugar mixture, being careful not to overmix. The dough should come together without being too tough.
    • Wrap the dough in plastic wrap and refrigerate for at least 30 minutes. This helps the dough hold its shape while baking.
  • Adding the Raspberry Filling:
    • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
    • Roll the dough into 1-inch balls and place them about 2 inches apart on the baking sheet.
    • Use your thumb or the back of a spoon to create a small well in the center of each cookie.
    • Spoon a small amount of raspberry jam into each well, being careful not to overfill.
  • Baking and Finishing Touches:
    • Bake the cookies for 10–12 minutes, or until the edges are lightly golden.
    • Remove from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack.
    • Once fully cooled, drizzle the melted white chocolate over the top of each cookie for a finishing touch.

Notes

  • Measuring Ingredients: Use a kitchen scale for more accurate measurements, especially with the flour.
  • Don’t Overbake: These cookies should be pale with a light golden edge. Overbaking can result in a hard texture.
  • Drizzle with Care: For a neat finish, use a spoon or piping bag to drizzle the white chocolate.
