Ingredients

For the Cake Layers:

  • ½ cup white chocolate chips
  • ½ cup heavy cream

Instructions

  • Prepare the Cake Layers:
    • Preheat the oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
    • In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
    • Beat butter and sugar together in a large mixing bowl until light and fluffy (about 3–5 minutes).
    • Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
    • Gradually add the dry ingredients to the wet ingredients, alternating with milk, starting and ending with the dry mixture. Mix until just combined.
    • Gently fold in the white chocolate chips and chopped pecans.
    • Divide the batter evenly among the prepared pans and smooth the tops.
  • Bake and Cool:
    • Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
    • Cool the cakes in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  • Prepare the Whipped Frosting:
    • In a chilled mixing bowl, beat heavy cream, confectioners’ sugar, and vanilla extract until stiff peaks form. Be careful not to overwhip.
  • Make the White Chocolate Ganache:
    • Heat heavy cream in a small saucepan over medium heat until it begins to simmer.
    • Pour the hot cream over the white chocolate chips in a bowl. Let sit for 2–3 minutes, then stir until smooth.
    • Cool the ganache until it’s a pourable consistency.
  • Assemble the Cake:
    • Place one cake layer on a serving plate or cake stand. Spread an even layer of whipped frosting over the top, then drizzle with ganache.
    • Repeat with the second and third cake layers, spreading frosting and drizzling ganache between each layer.
    • Cover the entire cake with the remaining whipped frosting, smoothing it with a spatula.
  • Decorate and Serve:
    • Drizzle the remaining ganache over the top of the cake, letting it drip down the sides.
    • Sprinkle additional chopped pecans on top as a garnish.
    • Chill the cake for at least 30 minutes before serving.
